Crispy Potato Biscuits Recipe
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup unsalted butter, cold and cubed
- 1 cup mashed potatoes, cold
- 1/4 cup buttermilk, cold
- 1 egg, beaten
- 1 tablespoon water
- Coarse sea salt, for sprinkling
Instructions:
Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
Stir in the cold mashed potatoes and buttermilk until just combined. Be careful not to overmix the dough.
On a lightly floured surface, turn the dough out and knead it a few times until it comes together.
Pat the dough out to about 1/2-inch thickness. Use a biscuit cutter or the rim of a glass to cut out biscuits. Place the biscuits onto the prepared baking sheet.
In a small bowl, whisk together the egg and water to create an egg wash. Brush the tops of the biscuits with the egg wash.
Sprinkle the tops of the biscuits with coarse sea salt.
Bake the biscuits for 15-20 minutes or until they are golden brown and crispy.
Remove the biscuits from the oven and let them cool on the baking sheet for a few minutes before serving.
