Potato Donuts Recipe
Ingredients:
- 1 medium-sized potato, peeled and boiled
- 1/2 cup milk
- 1/4 cup sugar
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2 and 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions:
In a large mixing bowl, mash the boiled potato until it is smooth.
Add the milk, sugar, melted butter, egg, and vanilla extract to the mashed potato and whisk until everything is well combined.
In a separate mixing bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
Cover the bowl with plastic wrap and refrigerate for 1 hour.
Heat vegetable oil in a large pot or deep fryer over medium-high heat.
On a lightly floured surface, roll out the chilled dough to about 1/2 inch thickness.
Use a donut cutter or a round cookie cutter to cut out the donuts and use a smaller cutter to make the holes in the center.
Fry the donuts in the hot oil until they are golden brown on both sides, turning once.
Remove the donuts from the oil with a slotted spoon and drain on paper towels.
Dust the warm donuts with powdered sugar before serving.
